Happy Monday again everyone! I am still loving doing these Monday Musings posts and have yet to go a single week without finding new products that I am excited about. I hope you love these posts as much as I do!
#1 Birch Benders Paleo Waffles
I have a new ALL-TIME favorite!! I have been looking for these pre-made frozen waffles for quite some time now and they just got put back in stock at Natural Grocers, where I work! So exciting. And even better? They totally went above and beyond my expectations.
And with a super clean ingredient list, I can feel confident that I am putting high-quality ingredients into my body and feel great the rest of the day. These waffles are seriously so good! I love them plain and also love them as a vessel for toppings like coconut butter, maple syrup or even some fresh fruit! Honestly, I could even use these as “sandwich bread” and I’m sure it would tase awesome.
The only downside is that unless you are able to locate a store that sells the frozen pre-made paleo waffles, you will likely have to make your own waffles. Good thing Birch Benders makes a paleo waffle mix that is just as good as the frozen ones! Can’t beat convenience, but the waffle mix comes in a close second. Birch Benders also makes gluten-free waffle mix and just came out with a brand new Keto waffle mix! How fun.
Because sometimes you can’t always make your own! And in those cases, it is super awesome to have such clean and high-quality products to buy. I am thankful for this option when I am on-the-go too! Bone broth does such great things in the body (helps to heal the gut lining, rebuild muscles and encourage hair, skin and nail growth!) so it’s great to have this option when I am short on time to still be able to treat my body right.
What I really love about the Nona Lim broth is that there aren’t any onions in it! I have a hard time digesting onions and typically end up very bloated and in pain. If you haven’t noticed I don’t include a lot of onions in my recipes and this is why! I am happy to have found a broth that doesn’t include onions so I can keep on feeling my best and not worry about if I will be doubled over in pain 30 minutes after consuming it.
Personally, I love to heat these broths until just under boiling and add my own Redmond’s sea salt to them. In my opinion, the saltier the better! It also can work as an electrolyte drink in this case and help to get you extra hydrated. Nona Lim also makes different flavors like: Thai Coconut Lime Bone Broth, Ginseng Chicken Bone Broth and Turmeric Chicken Bone Broth. YUM. I can’t wait to try the Thai Coconut Lime one!
Guys, I am ECSTATIC to have found these chocolate chips!! 100% dark chocolate is one of my favorite things ever and I am excited to have found a brand that is dairy-free, gluten-free and have no added sugar! Best ever.
I love me some dark chocolate and sometimes I just want a couple chocolate chips to fill that chocolate craving. These do just that. I am also really excited to experiment with more sugar-free desserts and chocolate-dipped things. It has taken some time but I have slowly over the course of a few years, adjusted my palate to liking less sweet desserts, but I still love to enjoy them every once in a while! Having chocolate on hand makes me happy inside, especially knowing that it isn’t full of junk ingredients and extra sugar. I highly recommended trying some Pascha brand chocolate out if you are looking for cleaner, more nutritious chocolate. Excellence.
#4 Thai Green Apple Slaw from Ready or Not by Michelle Tam (Nom Nom Paleo)
Yuuum. I absolutely loved this recipe. I just made a huge batch on Saturday and have been super enjoying it the last few days. Ultimate freshness in your mouth! I think I have been trying to channel spring through this slaw and it’s almost working. Almost.
I don’t normally love raw salads but this one was just so dang good. The Thai Citrus dressing used over the top MADE THIS DISH. I have made a few other dishes from Michelle’s most recent book, Ready or Not, and have found every single one to be super flavorful, creative and full of nutrients! Exactly what I am looking for in recipes when I choose to make something created by someone else! I am super in love with Michelle’s book and highly recommend it to anyone who feels like getting dinner on the table is a struggle sometimes.
Michelle breaks her book down into 3 different types of preparedness: ready, not ready and super-quick emergency meal ideas to give everyone a leg up when it comes to serving healthy food! This salad only took me 15 minutes to put together and would be perfect for multi-tasking during a meal prep or while preparing the main course.
Fresh, bright flavors are what I’m all about right now and I can’t believe I haven’t tried this salad until this last week! Dang gooood. For extra credit bonus points and crunch I added some Epic Baked Pork Rinds on top and feel like it was the absolute gold standard. Can’t go wrong with pork rinds.
