It’s Monday, Monday gotta get down on… Monday? Okay, okay that maybe wasn’t the greatest but I hope that you are having the greatest Monday! Or at the very least that you are doing something (even if its small) for yourself today that gives you life. For me, that’s fitting in a workout before work and spending time with my pup. He is the best little snuggler.
Sometimes it’s just the little things that fill us up and make it easier to focus on the bigger goals ahead of us. For me, taking care of myself allows me to give more of myself to others whether that be better blog posts, a more educated response or even making dinner for those that I love. It really pays off in the long run to prioritize my own needs first and then feel rejuvenated and energized for what is ahead.
If you ever wonder why I talk about taking care of ourselves so much (especially on Mondays) it’s because I know so many of us have the role of caretaker in our lives – whether it is as a mom, wife, daughter, husband, brother or any other role. We constantly put others needs before ours and in some cases that is absolutely necessary. However, if we continue to neglect ourselves and our inner voices than we will ignore any signs and symptoms that we are becoming unwell. We might ignore those signs until its too late and we are landed with illness or disease.
I love to talk about this on Mondays because this day of the week is typically looked upon with dread and negativity. Monday is the day many start their work week – and I am sure that most of this negativity is because most don’t enjoy their jobs. I really want to be able to change the literature and mindset behind this and either be more positive and create a better mindset surrounding the work week or motivate those who don’t enjoy their work to DO SOMETHING ELSE. Honestly, you are free to choose what you do for work – don’t settle for less than you are worth.
Anything is possible, just look around. What others have accomplished is out there in the universe for you too. On that light note, here is what I am into this week:
#1 Laird Superfood Creamer (Cacao)
This creamer is fantastic. I am only sad I didn’t try it sooner! I had originally bought this for my fiancé and ended up trying some and LOVED IT. This superfood creamer has only a few ingredients: coconut milk powder, cocoa power, Aquamin (marine algae), coconut oil and a little bit of coconut sugar! Simple.
If you’re wondering WTF is Aquamin? Let me educate you, because I had no clue at first either. Aquamin is a type of marine algae that is rich in calcium and magnesium, it also contains over 72 trace minerals. All from a little sea plant! How neat. This superfood creamer really takes super to the next level. I especially love using this before my morning workouts in my matcha. I love knowing that I am getting a boost of calcium and trace minerals after losing electrolytes through sweat.
So what does it taste like? Since I have only tried the cacao flavor, it tastes a little bit like hot chocolate. Not the overly sweet kind that most might be used to but a much more natural and only lightly sweet one. I like the slight cocoa flavor and find I don’t miss the sugar at all!
You can also use this creamer in coffee, desserts or even alone with some nut milk as a stand in for hot chocolate!
I am so happy I picked up a sample of this amazing post-workout powder from work – I thing I have found a new favorite post workout drink!! I don’t usually consume anything post-workout in terms of beverages but sometimes I feel like I really need to replenish electrolytes and other minerals that I have lost through sweat. This super clean powder really fits the bill!
Typically post-workout powders are full of junky ingredients like sugars, sugar alcohols, additives or binders. Not this one! I love the fact that it has BCAAs (leucine, isoleucine and valine) and electrolytes. And it tastes just like raspberry lemonade. SO good. Highly recommended. I am so happy to have found an awesome recovery product from a company that I love. I can’t believe I haven’t talked about coconut aminos before! I use them almost daily and loooove the salty but slightly sweet flavor they give to any dish. I think if I had to pick one flavor profile for the rest of my life I would pick salty. Yep, I definitely would.
Haven’t tried coconut aminos yet? Cool! It is similar to soy sauce in profile but instead of being made out of fermented soy, coconut aminos come from coconuts! Coconut sap is aged and then blended with salt to make this amazing condiment. I like it MUCH BETTER than soy sauce and much prefer this slightly sweet but salty flavor on meat, veggies and all Asian-style food!
Trader Joe’s sells a version of coconut aminos (at a great price point) but the Big Tree Farms is my all-time favorite. It is sweet but not overly so and really reminds me of classic soy sauce flavor. I use coconut aminos in some of my recipes like Instant Pot Beef and Broccoli, Creamy Curry Sauce, Homemade Ketchup, Chinese Five Spice Chicken, and Emerald Green Chicken Curry. Drooling over here just writing about this coconut butter. I typically make my own coconut butter but happened to pick up a packet of Artisana at work and damn. IT’S SO CREAMY and delicious. If you’ve never had coconut butter it has a perfectly creamy and naturally sweet flavor but without any added sugars! That makes it awesome for sugar-free desserts and late night snacks that don’t cause any guilt!
I’m not sure I will ever go back to making my own coconut butter after having the Artisana brand, nor will I miss the process of making coconut butter! Remember when I made these AMAZING brownies from Christina Rice Wellness? Yeah, I remember. I think I need to make them again ASAP.
If you’re wondering what to use coconut butter on, you can use it anywhere you would use nut butter! I love it on apples, bananas, sweet potatoes, in desserts or straight up! It’s so good.
#5 Turmeric Tomato Soup via Affordable Paleo Cooking in Your Instant Pot by Jennifer Robins
I am sold. Turmeric in tomato soup should just always be a thing. Always. I was blown away by the flavor in this simple soup and was so happy to have leftovers for a few days! Made even easier by only using one pot to make (the always amazing Instant Pot) and making clean-up a breeze.
I made another recipe a few months back from the same cookbook, Sloppy Joes, and am happy to say that this tomato soup recipe is just as good! And so damn simple. What more could you ask for?! I topped my serving with some ground turkey for a protein and called it a meal. Since this tomato soup also contains carrots I was pretty proud of myself for upping my veggie content for the day.
I really can’t say enough about this book. I have loved every recipe I’ve tried and they are all so easy. You all know by know how enamored I am with the Instant Pot and holy moly it has made my life so much easier. I am able to meal prep so quickly and get back to doing other things, like climbing and learning more about food and supplements!!
