Strawberry Two-Layer Chia Pudding (Paleo)

Valentine’s Day is almost here! What are your plans? Are you more of a stay-in-at-home type of person or a make-a-reservation person? Maybe you’re a stay at home with your gal-friends type of person. Oooh, I want to know! The fiance and I are just planning on having dinner together and doing our normal routine things! To me, that feels more special than having a fancy dinner at a restaurant. Made even more true when I enjoy my own cooking more than the cooking at most restaurants.

However you are spending the holiday, I hope you can make time to have this awesome chia pudding! Chia pudding is one of my love languages. I loooove the texture and how customize-able you can make them. And adding strawberry powder makes it a pretty pink color that is super cute!

You could totally just make one of the layers – or go crazy and LAYER IT UP! You could do multiple layers of each color or put strawberries in between the layer. Oh, the things I would do if I had infinite time 😉

Strawberry Two-Layer Chia Seed Pudding

(PALEO, GLUTEN-FREE, DAIRY-FREE, WHOLE30 option, VEGAN)
SERVES 3-4
PREP TIME: 10 MINUTES            COOL TIME: 4 HOURS

Ingredients Vanilla Layer:

¾ c. full-fat coconut milk

¼ c. chia seeds

¼ c. collagen peptides or vanilla protein powder of your choice

2 tbs. maple syrup or date syrup

Ingredients Strawberry Layer:

¾ c. full-fat coconut milk

¼ c. chia seeds

¼ c. collagen peptides or vanilla protein powder of your choice

¼ c. freeze dried strawberry powder

Method:

  1. Combine all ingredients for the vanilla layer in a blender and blend until the mix has reached a smooth consistency.
  2. Divide into 3 or 4 small containers and place in the refrigerator for at least 2 hours to thicken.
  3. Repeat with the strawberry layer and place in a singular jar or container to top the vanilla layer after it has thickened and become more solid.
  4. Top with desired toppings and enjoy after a workout, for breakfast or at anytime!
