Curried Tuna Salad (Paleo) AKA the Salad I Could Eat Everyday for Life

Happiest of Fridays! I hope you are staying warm wherever you are! Here, in Minnesota it has been unusually warm but still managed to dip into the negatives this last week. Brrr, super not a fan!

I wanted to share this recipe because I have been getting a lot of questions about what I eat for lunch! I typically am either working – on the blog, seeing clients, at my retail job or on a remodel job with my fiance – so I don’t have much time for anything super fancy! It has to be quick and it HAS to taste amazing!

My go-to for a quick protein in ALWAYS tuna. It never lets me down. I love how affordable and portable it is! It makes it so easy to eat healthy on-the-go and in a hurry. I have found awesome brands of tuna like Safe Catch and Wild Planet at places like Walmart and Target as well as most grocery stores, so I know that this is a reliable option for me – especially when I didn’t prioritize making lunch ahead of time.

If I am really in a hurry and at the grocery store, I’ll grab a can of tuna, an avocado or guacamole and some baby carrots. So easy! You have your protein, healthy fats and fiber. You could even add in some dried fruit or fresh berries. So satisfying and filling.

However, if I have a little bit more time in the morning to pack myself a lunch for later in the day or have a few minutes to spare before I eat then this is the salad I always make! I am simply obsessed with Primal Kitchen products now. I completely love their brand, how much care they put into their products and know that the quality will always be high.

Curried Tuna Salad (Paleo)



1 can tuna (I suggest and use Safe Catch Tuna)

1-2 tbs. mayo

juice of one lemon

⅛ tsp. curry powder

⅛ tsp. sea salt

1 tbs. dried cranberries (I love this brand because they don’t contain sugar)

1-2 cups arugula, spinach or any other leafy green you enjoy

¼ c. broccoli or alfalfa sprouts

1-2 beets, steamed and chopped (I always use Love Beets brand since they come pre-cooked!)


  1. Combine tuna, mayo, lemon, curry powder and sea salt in a bowl until completely combined.
  2. Stir in dried cranberries.
  3. Top over leafy greens and add sprouts and beets. SIMPLE AS THAT!
