Monday Musings 12.31.18 + Crispy Air Fryer Duck Fat Fries (Paleo)

Happy Holiday Monday!! Does it feel like a Monday to you? Nope, me either. Which is a very good thing in my opinion. I hope you are enjoying your New Year’s Eve however you are spending it and that you are surrounded in good company!

Since the fiance and I have been in Minneapolis, MN for the 3+ weeks I have been able to find so many new to me products that I have been loving! I really enjoy living in a larger city sometimes just for the exposure to new products. It has been a blast experimenting with different foods and supplements the last few weeks!

#1 Sun Potion Pearl Powder

Full disclosure on this one: I was sent a bottle of Pearl Powder by the lovely folks over at Sun Potion. While I did not purchase this item, all opinions are my own and I would never recommend a product I don’t fully believe in!

From their website Pearl Powder is “a revered longevity food that has been used for centuries by Taoist Herbalists to support one’s inner and outer radiance. It is an excellent source of minerals including calcium, zinc, iron, selenium, and amino acids. Pearl has strong antioxidant and anti-inflammatory properties and helps to support the body’s natural collagen production, even and clear skin, strengthen bones, and support the nervous system, healthy sleep cycles, and Shen (Spirit).”

I have been using it daily for about 2 weeks now and absolutely LOVE it! I have noticed much brighter skin, better immune function and an over all more calm feeling. My skin usually gets pretty dull and dry in the winter but not this time! I swear it’s the pearl powder in addition to a clean diet. It has been awesome to see some results from my diet and supplement routine.

I use the Pearl Powder in my daily morning matcha along with collagen (more on collagen in a blog post here), ghee and coconut milk. It is tasteless and if anything makes my drink that much more creamy! I am excited to also start experimenting with the Pearl Powder in baked goods or even a raw dessert soon. What better way to enjoy supplements than baked into a delicious dessert?! None, no better way.

#2 Numi Turmeric Amber Sun Tea

I am head over heels for this tea!! Ever since my car accident back in December 2017 I have experienced more body aches and back pain than before. This is where turmeric comes in! Turmeric is incredibly good at reducing inflammation in the body and I am always looking for ways to incorporate it into my everyday life!

I have always love Numi brand tea but this is my first time trying their Turmeric flavor and DAMN it is good. It is slightly sweet but with no added sweeteners and feels so comforting especially in the colder months. I have really been enjoying multiple cups daily and can feel it keeping my inflammation at bay. It’s more of an absence of inflammation really, where I can tell if I don’t drink it for a few days that the inflammation starts creeping back in.

#3 Cleveland Kraut Sauerkraut

YUM. I love sauerkraut and I especially love a good small business sauerkraut. I found this Cleveland brand sauerkraut at a local Target store and was so excited to see the clean ingredient list on the back – just cabbage, water, kosher sea salt and caraway seeds!

And as an added bonus, it tastes awesome! It doesn’t have a super strong vinegar-y taste like some sauerkraut can have but instead tastes bright and ALIVE! I know that sounds weird that alive is a taste but trust me, you’ll see if you try it. Teeming with probiotics, sauerkraut is an AWESOME addition to a nutrient dense diet and can help to feed the good bacteria in our guts and help us to feel our best.

Highly reccommend to check this brand out, I can’t wait to get my hands on their Curry Kraut or their Beet Red Kraut. They sound soooo good!

#4 Epic Traditional Duck Fat

I have been wanting to get my hands on Epic Duck Fat for so long!! I finally found it on sale at Whole Foods this last week for 30% off and decided that I HAD to give it a try! I couldn’t be more pleased either! It has been such a wonderful addition to everything that I’ve used it with so far.

I love Epic brand so much for their commitment to using all the available animal parts, minimizing waste and making head-to-toe products. I have enjoyed every single product I’ve tried from Epic so I wasn’t surprised to also love their duck cooking fat! I have been using it as a swap for wherever I would normally use ghee or olive oil. That means it goes in my cast iron skillet, roasted veggies and even eggs!

One of the first things I was PSYCHED to make was duck fat fries. Paired with my new Air Fryer it just sounded heavenly. Turns out, I was so right! The silky profile of the duck fat paired perfectly with the starchy and crispy potatoes. I could eat these every day. Scroll down for the recipe!!

#5 NuWave Air Fryer!!

Welcome to the next best thing. I have been low-key wanting an air fryer for around a year now and am SO HAPPY I got one for Christmas from the fiance! It has been such a lifesaver lately and produces the most perfectly crisp food. Highly impressed.

One of the biggest reasons that I love my new air fryer is how evenly it crisps food. And it is seriously SO EASY to use. You can choose both the temperature and time and even pause for flipping to make sure everything browns evenly.

I made these Crispy Air Fryer Brussels Sprouts on Friday. They are the bomb.com you need to give them a try!

Crispy Air Fryer Duck Fat Fries (Paleo)

(PALEO, GLUTEN-FREE, DAIRY-FREE, REFINED SUGAR-FREE)
YIELD: ~2 cups                   SERVES 4
PREP TIME: 10 MINUTES            COOK TIME: 30 MINUTES

Ingredients:

2 lb. red potatoes or russet potatoes, peeled and cut into fry shapes

1 tbs. Epic Duck Fat

½ tsp. sea salt

¼ tsp. oregano

⅛ tsp. smoked paprika

¼ tsp. thyme

⅛ tsp. black pepper

pepper to taste

Method:

  1. Combine sea salt with oregano, paprika, thyme and black pepper in a small bowl.
  2. Peel and coat with duck fat and spice blend. Toss to coat fully.
  3. Set air fryer to 400 degrees and timer for 15-20 minutes.
  4. Pause fryer every 5 minutes or so to shake basket to make sure they crisp evenly.
