Monday Musings 9.24.18 + Blueberry Oatmeal Muffins (Gluten-Free)

Haaaapppyy Monday! Are you a Monday fan? I am for sure. I love the feeling of a brand new week and being able to plan the week out sure makes it easier. I like to start most Mondays off with an early morning run as a commitment to myself that getting outside is a priority! And the endorphins don’t hurt either 😉

#1 Dawn Wall Film

This was EPIC! If you aren’t sure what the Dawn Wall is, click here for an overview. Basically, two guys climbed a really hard, really long route up a wall in Yosemite, California. It was pretty groundbreaking and really a bit feat for climbing.

I loved this film because it gave me the sense that there is still so much possibility left in the climbing world! There is still a lot to discover and so many boundaries to be pushed and explored still. I love being outside in nature and feeling the freedom that comes with it.

Even though the type of climbing that they do in the film isn’t the type I prefer it was still incredibly inspiring to watch the try hard and passion they shared for their goal.

Certainly worth a watch.

#2 HydroFlask

I cannot say enough about these!! I seriously love my HydroFlask and it keeps things SO HOT! Big praise for not using BPA in their products as well as being really easy to clean and the fun colors they come in.

Though they are a little spendy, I find it well worth the cost because I want to bring it with me everywhere and end up not ever needing disposable cups! I love the fact that I can reduce waste, use something without chemicals and BPA and also keep things hot for hours.

If you don’t have one already, you’re kind missing out!! I either drink matcha or tea (with collagen) out of it every day and it stays the perfect temperature for hours.

#3 Waterloo (+ACV)

I am getting pretty obsessed with flavored sparkling water again! First it was La Croix and now Waterloo! I love Waterloo because it seems less carbonated and sits in my stomach a bit better.

Waterloo is also Whole30 certified and comes in awesome flavors like Grapefruit, Watermelon, Lime and more!

Adding in a splash of apple cider vinegar helps with digestion and really brings out a natural sweetness in the drinks. They don’t taste bitter at all! Give it a try if you are looking for something sweet without any sugar or calories.

#4 Blueberry Oatmeal Grab-And-Go Muffins

These little pocket-sized muffins are so easy to take on-the-go! They are really easy to make and can make breakfasts in the mornings a breeze. They are also kid-approved and low in sugar!

I love using certified gluten-free oats to make sure there isn’t cross contamination from the harvesting process, but if that isn’t a concern for you then regular oats are fine too. You can also play around with the type of fruit you use and the sweetener. Sub out the honey for maple syrup or even use brown sugar!

Gluten-Free Blueberry Oatmeal Muffins

(GLUTEN-FREE, DAIRY-FREE, VEGAN OPTION)
SERVES 6
PREP TIME: 15 MINUTES            BAKE TIME: 25 MINUTES

Ingredients:

2 c. rolled oats (gluten-free)

½ c. almond meal

1 tsp. baking powder

¼ tsp. sea salt

1 tsp. cinnamon

2 eggs

¼ c. honey (can sub maple syrup)

½ c. coconut milk (can sub almond milk)

⅓ c. ghee, coconut oil or avocado oil, melted

1 tsp. apple cider vinegar or lemon juice

1 tsp. vanilla

1 c. blueberries

Method:

  1. Preheat oven to 350° and line a muffin tin with liners, use a silicone muffin tin or grease liberally with ghee or coconut oil.
  2. Combine the dry ingredients, the gluten free oats, almond flour, baking powder, sea salt and cinnamon.
  3. Slowly add in the eggs, honey, coconut milk, apple cider vinegar, vanilla and ghee into the dry mixture and combine until a smooth batter forms.
  4. At this point you can carefully stir in the blueberries. Spoon into the muffin tins, about most of the way full.
  5. Bake for 25-30 min or until golden brown.
  6. Let cool at least 30 minutes in the pan and then enjoy!
