Happiest of Mondays! Hopefully there is some semblance of spring happening wherever you are in the world. Here in Spokane, WA it has been gorgeously sunny and as warm as 60 the last few days which is a big change from the 20 and 30 degree weather we had been having!
I’m back with another supplement spotlight! This time I wanted to write about an increasingly popular supplement: turmeric. Turmeric has been gaining traction for years now – and rightfully so – and is often touted for it’s inflammation modulating abilities.
Guys are you ready for this?! Because I have seriously made the best thing ever. I am so proud of this one!! This Green Chile Chorizo Casserole was born out of me being so excited that I actually found a clean chorizo brand that I like that I couldn’t wait to make something with it! I also had a spaghetti squash on hand and knew I had to make a riff on my Egg Roll Casserole!
Haaaappy Monday to you all! I am heading into another week of work with a fridge full of food and a happy tummy. I have found so many great products this week and have been experimenting in the kitchen to come up with new recipes!! I’ll be sharing those recipes later this week and next week. You know the Everything But the Bagel Spice blend that is all the rage right now?! Combining it with kale just seemed like a logical idea when your diet doesn’t include too many bagels. And I was totally right, these kale chips are awesome.
Hold the phone. Have you had tostones yet?! Also known as smashed twice-fried plantains, I am soooo down for these little gems. Since you all know by now how much I love my carbs (real, whole food forms of carbohydrates of course!) and I am always looking for ways to switch things up.
